6 C 2-401.11: (A) Except as specified in ¶ (B) of this section, an EMPLOYEE shall eat, drink, or use any form of tobacco only in designated areas where the contamination of exposed FOOD; clean EQUIPMENT, UTENSILS, and LINENS; unwrapped SINGLE-SERVICE and SINGLE-USE ARTICLES; or other items needing protection can not result. (B) A FOOD EMPLOYEE may drink from a closed BEVERAGE container if the container is handled to prevent contamination of: (1) The EMPLOYEE'S hands; (2) The container; and (3) Exposed FOOD; clean EQUIPMENT, UTENSILS, and LINENS; and unwrapped SINGLE-SERVICE and SINGLE-USE ARTICLES.
Observed several personal drinks spread out in the kitchen area. Provide for all personal drinks be stored in one location that is separate from food and food equipment and food storage areas. Correct and maintain by next routine inspection.
10 C 6-301.14: A sign or poster that notifies FOOD EMPLOYEES to wash their hands shall be provided at all HANDWASHING SINKS used by FOOD EMPLOYEES and shall be clearly visible to FOOD EMPLOYEES.
Observed paper towels and soap for the large sink in the back by the ice machine but no hand washing signage. Provide the signage and maintain by next routine inspection.
16 P 4-702.11: UTENSILS and FOOD-CONTACT SURFACES of EQUIPMENT shall be SANITIZED before use after cleaning.  
The dishwasher was not dispensing the correct amount of sanitizer or hot enough to sanitize by heat. Provide for the dishwasher to properly sanitize dishes at the end of the cleaning cycle.

Facility will be manually adding chlorine sanitizer until the repair tech can come out. He is scheduled for today. - (Correct By: Mar 28, 2024)
45 C 4-903.11( A)(1)(2)(3): (A) Except as specified in ¶ (D) of this section, cleaned EQUIPMENT and UTENSILS, laundered LINENS, and SINGLE-SERVICE and SINGLE-USE ARTICLES shall be stored: (1) In a clean, dry location; (2) Where they are not exposed to splash, dust, or other contamination; and (3) At least 15 cm (6 inches) above the floor.
Observed a box of cups left on the floor in the breakfast nook. Store all food equipment off of the floor and maintain by next routine inspection.
49 C 4-601.11(C): (C) NonFOOD-CONTACT SURFACES of EQUIPMENT shall be kept free of an accumulation of dust, dirt, FOOD residue, and other debris.
Observed the following areas in need of cleaning:

1) Shelves in the walk-in cooler

2) Space between the top of the drawer cooler and prep counter by the microwave in the cook line.

3) Door gasket for the reach in freezer by the fyers.

4)Plug-in cord for the soup warmer is dusty.

5) Inside of the tray for the sugar and coffee lids by the breakfast station nook.

Clean and maintain by next routine inspection. Repeat
55 C 6-501.12: (A)PHYSICAL FACILITIES shall be cleaned as often as necessary to keep them clean.(B)Except for cleaning that is necessary due to a spill or other accident, cleaning shall be done during periods when the least amount of FOOD is exposed such as after closing.
Observed the floor in the dry storage closet to have some food debris accumulating and in need of cleaning. Clean and maintain by next routine inspection.
56 C 6-305.11: (A) Dressing rooms or dressing areas shall be designated if EMPLOYEES routinely change their clothes in the establishment. (B) Lockers or other suitable facilities shall be provided for the orderly storage of EMPLOYEES' clothing and other possessions.
Observed a lot of personal coats and jackets stored hanging off of various racks throughout the kitchen. Provide a location for the storage of all employee coats/jackets and personal items and maintain by next routine inspection.
Inspection Comments   FOLLOW-UP WILL BE DONE TO CHECK ON THE DISH WASHER IN 3 DAYS IF NOT CALLED SOONER.
